For the Chicken:
- 4 boneless skinless chicken breasts
- Salt and freshly ground black pepper to taste
- 2 large eggs
- 1 cup grated Parmesan cheese
- 1 cup seasoned breadcrumbs
- 1 tsp garlic powder
- ½ tsp Italian seasoning optional
- 2 tbsp olive oil for the baking sheet
- 2 tbsp melted butter for drizzling
Prepare the Chicken
If the chicken breasts are thick, pound them to an even 1-inch thickness for even cooking.
Season both sides with salt and pepper.
Prepare the Crust
In one shallow dish, mix the Parmesan, breadcrumbs, garlic powder, and Italian seasoning (if using).
