Ingredients:
- 2 cups short-grain white rice
- 1 ½ tbsp sesame oil
- 1 tbsp salt
- 6-8 sheets of roasted seaweed gim
- 1 cup spinach blanched and seasoned
- 1 medium carrot julienned
- 1 cucumber julienned
- 4 large eggs scrambled and sliced into strips
- 1 cup pickled radish danmuji, sliced into strips
- 1 cup cooked beef or fish cakes thinly sliced (optional)
- Sesame seeds for garnish
Prepare the fillings:
While the rice is cooling, prepare your fillings. Blanch spinach and season it with sesame oil, salt, and garlic. Julienne the carrot and cucumber, and slice the pickled radish. If using, slice the cooked beef or fish cakes into thin strips.
Assemble the Kimbap:
Lay a sheet of seaweed on a bamboo sushi mat, shiny side down. Spread a thin layer of seasoned rice on the seaweed, leaving about 1 inch at the top. Place the spinach, carrot, cucumber, egg strips, pickled radish, and beef (or fish cakes) in a line across the center of the rice.
Roll the Kimbap:
Using the sushi mat, gently roll the Kimbap from the bottom up, applying light pressure to keep the roll tight. Once rolled, use a sharp knife to slice the roll into bite-sized pieces. Repeat with the remaining ingredients.
